There is nothing better than a warming chicken dish as the centre of a family meal. This Chimichurri roasted chicken is flavourful and can easily turn a simple roasted chicken into a spectacular dish.
This dish is a progression of what my mother and I use to do when we would cook trout back when I was a kid, very similar method to en papillote.
This snapper pie is inspired by my mum, it is highly adaptable so if you want to use a variety of seafood instead of white fish the sauce will still compliment the flavours too – Sami
