Using kitchen shears, cut along the top of the lobster shells lengthwise, from the base to the tip. Gently pull the shell apart and lift the lobster meat slightly, keeping it attached at the base.
Cook the Lobster Tails:
Preheat your grill to medium-high heat.
Brush the lobster meat with olive oil and season with salt and pepper.
Place the lobster tails shell-side down on the grill. Cook for about 6-8 minutes, or until the meat is opaque and cooked through.
Make the Lemon Butter Sauce:
While the lobster is grilling, melt the butter in a saucepan over medium heat.
Add the minced garlic and cook until fragrant, about 1 minute.
Stir in the lemon juice, lemon zest, and white wine (if using). Let the mixture simmer for 2-3 minutes.
Season with salt and pepper to taste.
Remove from heat and stir in the chopped parsley.
Serve:
Remove the lobster tails from the grill and brush with a bit more melted butter if desired.
Serve the lobster tails with the lemon butter sauce drizzled over the top or on the side for dipping.
