Step 1
In a bowl, mix together the flour, salt & pepper.
Step 2
Heat the oil in a large pot.
Step 3
Toss the white baits into the four mixtures and shake off excess flour. Drop fish into the oil and allow it to fry until crisp and golden brown. You will know it is ready when the fish floats to the top of the surface.
Step 4
Serve with a sprinkle of salt and lemon.
