XO Noodles with Slipper Lobster

INGREDIENTS

 

  • 300g slipper lobster meat
  • 300g spaghetti or pack of noodles
  • 1 bunch of bok choy, chopped
  • 1 large carrot, thinly sliced
  • 4 galic cloves, sliced
  • 20g unsalted butter

Sauce

METHOD

Step 1

Mix together all sauce ingredients in a small bowl. Set aside.

Step 2

Cook noodles in a large pot of salted water, stirring occasionally until al dente, drain and set noodles aside.

Step 3

In a large pan, add butter and garlic. Cook until fragrant. Add slipper lobster meat until it turns white. Transfer to a bowl and set aside.

Step 4

In the same pan, add oil, garlic, carrots & bok choy. Cook until softened. Add sauce mixture, slipper lobster meat and noodles. Toss through until everything is well coated. Do a taste test on a strand of noodles to adjust the seasoning.

Step 4

Transfer noodles to a large plate and serve!
