Snapper Ceviche

Ingredients:

  • 500g fresh snapper fillets, skin removed, cut into small cubes
  • 1/2 cup fresh lime juice (about 4-5 limes)
  • 1/2 cup fresh lemon juice (about 2-3 lemons)
  • 1 small red onion, finely sliced
  • 1 small red chilli, deseeded and finely chopped
  • 1/2 cup fresh coriander, chopped
  • 1 small cucumber, peeled, deseeded, and finely diced
  • 1 small avocado, diced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup extra virgin olive oil
  • Salt and pepper to taste
  • Optional: tortilla chips for serving

Instructions:

  1. Prepare the Snapper: Place the snapper cubes in a large, non-reactive bowl (glass or ceramic). Pour the lime and lemon juice over the fish, ensuring all the fish is submerged. Cover the bowl with plastic wrap and refrigerate for 30 minutes, stirring occasionally. The fish will “cook” in the citrus juice and turn opaque.
  2. Add Vegetables and Seasoning: After marinating, drain most of the citrus juice, leaving a little to keep the ceviche moist. Add the red onion, chilli, coriander, cucumber, avocado, and cherry tomatoes to the bowl.
  3. Season: Drizzle the olive oil over the ceviche and gently mix to combine. Season with salt and pepper to taste.
  4. Serve: Serve the ceviche immediately with tortilla chips or on its own as a refreshing starter.
