INSTRUCTIONS:
Step 1: Prepare Capsicums
- Preheat your oven to 190°C
- Cut the tops off the Capsicums and remove the seeds. Set aside.
Step 2: Cook the Seafood Mixture
- Heat olive oil in a large skillet over a medium heat.
- Add the chopped onion and cook until softened, for about 5 minutes.
- Stir in the minced garlic and cook for another 1 minute.
- Add the shrimp and scallops. Cook for 3-4 minutes.
- Stir in the diced tomatoes and cook for another 2 minutes.
- Add the frozen peas, cooked rice, oregano, basil, smoked paprika, salt, and pepper. Mix well and cook for another 2-3 minutes until everything is heated through and combined.
Step 3: Stuff the Capsicums
- Spoon the seafood mixture into the prepared Capsicums, packing it in slightly.
- Place the stuffed peppers upright in a baking dish.
Step 4: Bake
- Sprinkle the tops of the stuffed Capsicums with shredded cheese.
- Cover the baking dish with aluminium foil and bake for 30 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the peppers are tender and the cheese is melted and slightly golden.
Step 5: Finish and Serve
- Remove from the oven and let the Capsicums cool slightly.
- Garnish with fresh parsley before serving.
