Punchy Pineapple Prawn Tacos

INGREDIENTS

Taco

  • 6 x Tortillas

Prawn Marinade 

  • 20 Prawn Cutlets 
  • 1 tbsp Ground garlic

  • 1/2 tbsp Cayenne pepper

  • 1 tbsp Taco seasoning

  • 1 tbsp Paprika

  • Olive oil

  • Salt & pepper

Pineapple Salsa

  • 1 Capsicum
  • 2 Tomato
  • 1 Red onion
  • 1 Small Pineapple
  • 1 Jalapeño
  • 2 whole Lime juice
  • 1/2 Coriander
  • 2 pinch Chili flakes
  • Salt & pepper

METHOD


Step 1

Put prawns, ground garlic, cayenne pepper, taco seasoning, paprika, olive oil, salt and pepper in a bowl to marinate in the fridge.

Step 2

For the pineapple salsa – dice up capsicum, tomato, red onion, pineapple, jalapeno and coriander. Combine everything in a bowl and mix in lime juice, chilli flakes, salt & pepper. Set aside, and let the flavours blend in the fridge.

Step 3

Heat a pan to high and add the marinated prawns. Cook for 3-4 minutes per side until the prawn is cooked.

Step 4

Warm the tortillas in a pan until nice and charred on both sides. Set aside.

Step 5

Start assembling the tacos. Add prawns and top with pineapple salsa, garnish with parsley and serve.
