Prepare the Fillets: Rinse the Murray Cod fillets under cold water and pat them dry with paper towels. Season both sides with salt and pepper.
Marinate: In a small bowl, mix the olive oil, minced garlic, and fresh thyme leaves. Brush this mixture over both sides of the fillets.
Arrange in Baking Dish: Place the seasoned fillets in a baking dish. Arrange lemon slices on top of and around the fillets.
Bake: Bake in the preheated oven for 15-20 minutes, or until the fish is opaque and flakes easily with a fork.
Garnish and Serve: Once cooked, remove from the oven and let the fillets rest for a couple of minutes. Garnish with chopped fresh parsley and serve immediately with your choice of sides.
Tips:
For extra flavour, you can add a splash of white wine to the baking dish before baking.
Pair with steamed vegetables, a fresh salad, or a side of roasted potatoes for a complete meal.
