Preheat your grill to medium-high heat (about 190°C/375°F).
Prepare the Bacon Bourbon Sauce:
In a medium skillet, cook the chopped bacon over medium heat until crispy. Remove the bacon and drain on a paper towel, leaving about 1 tablespoon of bacon fat in the skillet.
Add the minced garlic to the skillet and sauté until fragrant, about 30 seconds.
Stir in the bourbon, Worcestershire sauce, lemon juice, brown sugar, and unsalted butter. Let the mixture simmer for 2-3 minutes until slightly thickened.
Add the crispy bacon back to the skillet, stirring to combine.
Grill the Oysters:
Place the shucked oysters on the grill, still in their shells.
Spoon about a teaspoon of the bacon bourbon sauce over each oyster.
Grill the oysters for 5-7 minutes, until the edges curl slightly and the sauce bubbles.
Serve:
Carefully remove the oysters from the grill and place them on a serving platter.
Garnish with fresh parsley and serve with lemon wedges on the side.
