Crispy Prawn Sliders

Ingredients:

  • 500g king prawns, peeled and deveined
  • 1 cup panko breadcrumbs
  • 1/2 cup plain flour
  • 2 large eggs, beaten
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • Vegetable oil for frying
  • 8 small brioche slider buns
  • 1/2 cup mayonnaise
  • 2 tbsp sriracha sauce
  • 1 tbsp lemon juice
  • 1 cup coleslaw mix (cabbage, carrot, etc.)
  • 1/4 cup fresh coriander leaves
  • 1 avocado, sliced
  • Lime wedges for serving

Instructions:

  1. Prepare the King Prawns:
    • In a shallow dish, combine the panko breadcrumbs, smoked paprika, garlic powder, onion powder, salt, and pepper.
    • Place the flour in a separate dish and the beaten eggs in another.
    • Dredge each king prawn in the flour, then dip in the beaten eggs, and finally coat with the panko mixture, pressing gently to adhere.
  2. Fry the King Prawns:
    • Heat vegetable oil in a large frying pan over medium-high heat.
    • Fry the king prawns in batches until golden and crispy, about 2-3 minutes per side.
    • Transfer to a plate lined with paper towels to drain excess oil.
  3. Make the Sauce:
    • In a small bowl, mix together the mayonnaise, sriracha sauce, and lemon juice. Adjust seasoning to taste.
  4. Assemble the Sliders:
    • Lightly toast the brioche buns.
    • Spread a layer of the sriracha mayo on the bottom half of each bun.
    • Add a slice of avocado, a few coriander leaves, and some coleslaw mix.
    • Top with 2-3 crispy king prawns and a squeeze of lime juice.
    • Close with the top half of the bun.
  5. Serve:
    • Serve the sliders immediately with additional lime wedges on the side.
