Preheat your oven: Preheat your oven to 200°C. Line a baking tray with rock salt or crumpled foil to keep the oysters steady.
Prepare the cheese mixture: In a small bowl, combine the softened butter, minced garlic, lemon juice, chopped parsley, black pepper, and smoked paprika. Mix until well combined. Then, stir in the grated Parmesan and Cheddar cheeses.
Assemble the oysters: Place the shucked oysters on the prepared baking tray. Spoon about a teaspoon of the cheese mixture onto each oyster, spreading it evenly over the top.
Bake: Place the tray in the preheated oven and bake for 8-10 minutes, or until the cheese is melted and golden brown.
Serve: Remove from the oven and serve the oysters hot with lemon wedges on the side.
