Grilled Squid with Garlic, Parsley, and White Wine

Ingredients:
500g fresh squid, cleaned and cut into rings or kept whole if small
4 cloves garlic, finely chopped
1/4 cup fresh parsley, finely chopped
1/4 cup dry white wine
2 tablespoons olive oil
Juice of 1 lemon
Salt and freshly ground black pepper, to taste
Lemon wedges, for serving
Instructions:
Prepare the Squid:
If using whole squid, score the surface lightly with a knife in a crisscross pattern. This helps to tenderise the squid and allows the flavours to penetrate.
If using squid rings, ensure they are well-drained and patted dry.
Marinate the Squid:
In a large bowl, combine the chopped garlic, parsley, white wine, olive oil, lemon juice, salt, and pepper.
Add the squid to the marinade, tossing well to coat. Cover and refrigerate for 30 minutes to 1 hour, allowing the flavours to infuse.
Grill the Squid:
Preheat your grill or barbecue to high heat.
Remove the squid from the marinade, allowing any excess to drip off.
Grill the squid for 2-3 minutes on each side, or until it is just cooked through and has a slight char. Be careful not to overcook, as squid can become tough.
Serve:
Transfer the grilled squid to a serving plate.
Drizzle any remaining marinade over the squid.
Garnish with additional chopped parsley and lemon wedges.
Tips:
Serve with crusty bread to soak up the delicious juices.
A side salad of mixed greens pairs nicely with this dish.
