Season the fish inside and out with salt and pepper.
Heat a generous amount of vegetable oil in a large frying pan over medium-high heat.
Fry the whole mackerel for 3-4 minutes on each side, or until the skin is crispy and the fish is cooked through. You might need to do this in batches, depending on the size of your pan.
Drain the fish on paper towels.
Prepare the Lemon Salad:
In a large bowl, combine the salad greens, cucumber, red onion, cherry tomatoes, olives, and feta cheese.
In a small bowl, whisk together the olive oil, lemon juice, honey, Dijon mustard, salt, and pepper.
Pour the dressing over the salad and toss to coat.
Serve:
Arrange the fried whole mackerel on plates.
Serve with lemon wedges on the side.
Accompany with a generous serving of the lemon salad.
